Burdock soup recipe

Finally, I made my very first burdock soup. It was first introduced by a nutritionist friend shortly after I was diagnosed but my sister started making the soup for me. As I got better the soup got lesser so I decided it is time to take charge and learn how to make it. This quote has been taken off some other website which says "Burdock root has often been used to purify the blood by removing toxins that can build up in blood. It can be taken orally or used topically as a remedy for skin disorders. Also, burdock root can be a diuretic or soothe aching joints. Traditional Chinese healers used burdock root in combination with other plants to make cures for colds, measles, throat pain, and tonsillitis. Burdock root was also popular in Japan as a source of vitamins and other nutrients. In modern times, burdock root has been employed in the treatment of certain cancers. However, this use of burdock root still needs to be systematically tested."

The soup is really delicious without any salt or soy sauce or meat. Try it if you can:

You will need:

1 long burdock root from wet market or Just life at ikano. Peel off the skin and slice thinly.
2 small carrots sliced thinly
1 big radish (look for one with healthy leaves) sliced thinly
6 dried shitake mushrooms
6 -8 dates

Chuck all into crock pot. Cover with water and more. Wait till it boils and let it boil for 30 minutes before reducing heat to low and leave overnight.

I drank throughout the burdock soup and even had a bit left over for dinner where I made noodle soup with mee sua, broccoli, cauliflower and bitter gourd. I just blanched the vegetables to retain the enzymes. A successful first attempt. Praise the Lord!
