Carrot, strawberries, papaya

This is an inspired Jamie Oliver's recipe which I changed a bit.

In a bowl mix mint leaves, garlic, tomatoes
Add a bit of lemon juice
Squeeze them all together
Stuff into 2 halves of bell pepper

Pour a bit of grapeseed oil (yes, i cheated)
Bake covered with foil until nice and soft
Served on a bed of brown rice.
Poke the pepper with knife so that the juice oozes out onto the rice
Serve with salad on the side (lemon juice, braggs & extra virgin olive oil for dressing).
